What is Hand Tossed Pizza?

To hand-toss pizza dough, start by forming a smooth, elastic dough and letting it rise. Then, on a floured surface, press the center of a dough ball to stretch it and form a thick border for the crust. Use the back of your knuckles and gravity to help stretch and rotate the dough, gently pulling it into a large circle. Practice with a spinning motion on your hands, gradually increasing the speed and width, to create a consistently sized, stretchy pizza base ready for your toppings

1. Prepare the Dough

  • Mix Ingredients: Combine flour, salt, olive oil, yeast, and warm water in a mixing bowl. 
  • Knead: Mix until a shaggy dough forms, then turn it out onto a floured surface and knead for 7-10 minutes until smooth and elastic. 
  • Proof: Place the dough in a floured bowl, cover it, and let it rise in a warm place for 90-120 minutes until it has doubled in size. 

2. Shape and Stretch the Dough

  • Press the Center: 
    On a lightly floured surface, press down in the center of the dough ball, pushing air towards the edges to create a thick crust border. 
  • Drape Over Knuckles: 
    Drape the dough over the back of one hand's knuckles and a flat palm of the other to anchor it. 
  • Stretch and Rotate: 
    Use your knuckles and a gentle shake, allowing gravity to stretch the dough as you rotate it. You can also gently pull the edges apart with your hands, but be careful not to tear the dough. 

3. Toss the Dough

  • The "Tossing" Position: Hold the stretched dough on the back of your knuckles. 
  • Push and Spin: Push upwards and then flick your fingers up, letting the dough "flop" to create rotation and spin it in the air. 
  • Catch and Repeat: Catch the dough with your other hand, then repeat the tossing and catching motion, using your hand position to control the size. Continue until the dough reaches your desired size and shape. 

4. Top and Bake

  • Transfer: Gently place the stretched dough onto a floured pizza peel, a pizza screen, or a sheet pan. 
  • Add Toppings: Add your desired sauce, cheese, and toppings. 
  • Bake: Bake in a hot oven (450°F or above) until the crust is golden brown and the cheese is melted and bubbly.
